The most vital area in beer production lies in the yeast handling practices. IDMC cares for these living components in beer in most economical way. Brewers yeast is a facultative anaerobic microorganism. Yeast cells multiply logarithmically in presence of nutrients and oxygen as well as ideal conditions such as yeast concentration and optimal temperature. It is customary to use fresh yeast up to about six times and then subsequently dispose it. The yeast cells degenerate and become more susceptible to infection.
 
 

The yeast loses its ability to metabolize and adversely reduce diacetyl, poor colloidal stability, poor foam and taste. The main criteria for setting up yeast plants are: the concentration of yeast cells, pitching volume, frequency of pure culture, and the cast wort volume and wort composition.
